The most addictive fries you’ll ever eat

No matter what diet or health kick I’m on, I can’t pass up fries. Ever. Who can? Fries are at the top of my list when it comes to comfort food.

About a year ago, I tried something described to me as Japanese fries (is that even a thing?). On the one hand, it was all kinds of spicy deliciousness but on the other, they had dried fish and seaweed type stuff mixed in.  Not for me. No offence to fish, but definitely not on my fries.

Inspired by these fries I decided to create a similar dish at home, minus any fishy bits of course and I ended up with these sriracha fries finished with coriander and chilli rather than dried fish. If I was obsessed with fries before, these fries have taken my obsession to a whole new level. Like seriously. But please don’t take my word for it, make it and decide for yourself.

Sriracha fries recipe

Ingredients:
½ a bag of frozen fries (I prefer the uncoated ones)
salt
sriracha sauce
mayonnaise
1 tsp garlic granules
small handful coriander/cilantro roughly torn
1 red chilli sliced

Cook the fries according to the instructions or if you prefer, make your own fries. For the ultimate version of this dish, fry the fries – oven baked fries work too but nothing beats the fried version. While they’re cooking, make up the sriracha mayo by mixing 1 part sriracha to 3 parts mayo.

Once your fries are cooked, place in a large bowl and season them with salt to taste, add the garlic granules and give everything a good mix.  Next add the sriracha mayo and mix gently but thoroughly. You need just enough sriracha mayo so that the fries are evenly coated but not so much that the fries become soggy.  As a guide, I used about 1 tbs sriracha mayo for half a bag of fries that weigh approx 450 gms.

Scatter fries with coriander and sliced chilies and eat immediately. These fries need nothing else as in no dip, sauce, nothing. Just pop a few in your mouth with a leaf of coriander and you will be in heaven.

The magic of this dish lies in coating the fries in the sriracha mayo so don’t be tempted to serve the mayo as a dip on the side. These fries are my go to snack when I feel like treating myself and I also make them when I have friends over as not only are they super quick and easy to make, but they are so popular too.

I hadn’t told Richard that I was sharing this recipe on the blog, but the minute he saw it, he called me to say ‘we need to eat these tonight’ – so we did.  I swear, once you’ve tried these, you’ll feel compelled to make them every time you think of them.
